Menu
- Entrée: Kingfish crudo with yuzu dressing, avocado crema, crisp kohlrabi, kaffir lime leaf oil, sourdough croutons
- Main Option 1: Chicken ballotine wrapped in prosciutto, pork, pistachio and apricot stuffing, cauliflower mousseline, grilled asparagus, chicken velouté
- Main Option 2: Braised lamb shank with spiced soy reduction, onion strings, pommes purée, braised red cabbage, pickled oxheart tomatoes
- Main Option 3: Seared lion’s mane mushroom, miso white bean cream, two ways courgette, sautéed baby carrots.
- Dessert: Apple cake with oat and almond crumble, tart apple gelée, whipped crème fraîche, salted caramel
- Vegetarian/Vegan: A Vegetarian/Vegan modification is available and will apply to all courses. This must be requested when booking.

Dates are not guaranteed.
Availability is strictly limited. Bookings are essential.
BOOKINGS
Bookings are non-refundable and non-transferable to other Dine Beneath The Sea events – please carefully consider dates before completing your booking.
Bookings must be paid in full; places will not be held.
Bookings are for tables of 2 only.
Tables are randomly allocated on the night and cannot be pre-selected.

Need To Know
MEAL SELECTION & DIETARY REQUIREMENTS
Please select your preference of main meal when prompted in the Extras menu.
Guests with a dietary requirement, please select your preference of main meal then also select “Dietary Request” from within the “Extras” menu – this alerts us that your meal/s need to be modified.
Please indicate each guests’ dietary requirements in the Guest 1 and Guest 2 profiles as checkout, if applicable.
We endeavour to accommodate the dietary requests of all our guests, however this may not always be possible. We can accommodate vegetarian, vegan, halal and kosher requests, as well as provide low allergen options for those who are Gluten/Dairy/Egg/Shellfish/Nut intolerant.
Importantly, we are unable to guarantee requested meals will be free from traces of common allergens, and low allergen options may not be suitable for you.
Menu items are subject to change without notice, based on produce availability and suitability. Appropriate substitutes will be provided.
EVENT INFORMATION
Dress code is smart-casual attire.
Free parking is available in front of AQWA, including ACROD marked bays.
Doors open: 6.30pm.
Access: Reception is accessible by stairs or a ramp to the right of the stairs. Lift access is available between upper level and underwater tunnel.
Check-in: Please have your booking name/details at the ready and alert your host upon arrival if you have pre-requested a dietary/allergen friendly meal.
Seating: Tables are randomly allocated and cannot be selected or reassigned. Tables of two only.
Dinner Service:
- Guests are asked to be seated in the underwater tunnel by 7pm.
- Seated service includes 3 course meal with your choice of mains and a drinks package throughout. Beverages include beer, wine, sparking, cider & non-alcoholic options.
Event concludes at 9.30pm: Exit is through main Reception doors.
